Salmon Rillette Recipe
Salmon Rilette

Ingredients:
Base:
800 Grams Diced Salmon
120 Gram Shallots
1 pint of white wine
Finish: with chef
Lemon zest
Mayo
Chives
Directions:
Dice salmon to small cubes
Mince shallots or Bruinoise
Heat up shallots with wine till simmered
Place heat on low add salmon
And poach for 3 minutes drain the liquid
Place in Hotel pan and ice bath it immediately
Once cooled fold in the rest of the ingredients to taste with a chef
