Ingredients:
1000 Grams Ricotta Cheese
850 Grams White Peach Perfect Puree
5 grams black pepper
10 grams salt
30 Grams Ultratex-8
1 gram Xantham gum
Directions:
Blend ricotta cheese in vitamix till smooth
Whisk in ultratex and immersion blend xantham till combined
Add White peach Perfect Puree
Add salt and pepper add more to taste.
Place in pipping bag and store in cooler up to 3 days.
Fill squash blossoms with filling.
Tempura fry.
