Meringue
Yield: 2 quarts

Total time: 20 Minutes
Ingredients:
600 grams egg whites
1200 grams sugar
300 grams water
Directions:
Bring sugar and water to boil or till hits 120 C in temperature
Beat egg whites till soft peaks
Slowly drizzle in sugar mixture and whip on medium heat till mixture has cooled down
Make sure the sugar is cooled for 3-5 minutes before adding in to egg whites , but not longer the five minutes after you take it off heat.
Place in piping bags and Pipe out with chef
Dehydrate in 140 F oven low fan for 3 hours
Store in cool dry place for 5 days
