Ingredients:
2500 grams mayo
550 grams Sour cream
120 grams lemon juice
200 grams roasted garlic
64 grams shallots
40 grams Worstershire
80 grams salt
440 grams buttermilk
24 grams tabasco
24 grams fresh garlic brunoise
120 grams anchovies
160 grams grated parm or shaved
160 grams dijon
120 grams apple cide vinegar
40 grams blk pepper
4 whole Zested lemons
7 grams Black pepper
40 grams Parsley chopped
Directions:
Get all the ingredients together
Measure them properly
Mix all ingredients together except ultratex in robocoupe
Once everything is combined add ultratex while blending in slowly
Transfer to cambro, Date and store in cooler up to 7 days
